Coconut Fudge Date Granola Bar Recipe
Here's what you'll need:
- ½ cup walnuts
- ½ cup almond crumbs
- 1 ½ cups pitted dates
- 1 tsp pure vanilla extract
- 1 drop of almond extract or any other (optional)
- 3-4 tbsp cocoa powder
- 1 tsp salt
- 1/3 cup unsweetened coconut
- 1 handful of dried cranberries
- 1 handful of dark chocolate chips
Directions:
- Mix the nuts, dates, vanilla, salt, and cocoa powder in a food processor or blender. If the dates are dry, you may need to add up to 1 tbsp of water.
- Stir in the cranberries, coconut, and dark chocolate chips.
- Empty the mixture onto saran wrap and use it to mould it into a flat rectangle. Cut into bars.
- Chill the protein bars in the fridge or freezer for at least 15 minutes.
