While not overly sweet, these brownies have a rich taste and a texture that is very similar to fudge brownies. We'll admit, it’s hard to find a black bean dessert that tastes great. But these brownies will not disappoint.

Black Bean Brownie Recipe
Ingredients:
- 1 1/2 cups black beans (equal to a 15-oz can, drained and rinsed well)
- 2 tablespoons cocoa powder
- 1/2 cup quick oats
- 1/4 teaspoon salt
- 1/3 cup pure maple or agave syrup
- 2 tablespoons of brown sugar (can be substituted by increasing maple syrup to 1/2 cup)
- 1/4 cup coconut oil
- 2 teaspoons pure vanilla extract
- 1/2 teaspoon baking powder
- 1/2 cup to 2/3 cup semi-sweet chocolate chips (essential for the richness)
Steps:
- Preheat oven to 350 °F.
- Combine all ingredients except the chocolate chips in a good food processor and blend until completely smooth. The key is to blend well to mirror the texture of other flour-based brownies. A powerful blender will work, but a food processor will produce the best result.
- Gently stir in chocolate chips and pour into a greased 8x8 baking pan. You can sprinkle extra chocolate chips over the top for presentation.
- Bake brownies for 15-18 minutes. Let the brownies cool for 10 minutes then place in the fridge overnight.
