Everyone knows that breakfast is the most important meal of the day, but few treat it that way. Sugary cereals and baked goods may taste good, but they don't often do much to support your body.

Dedicated athletes typically choose energy-boosting and nutrient-dense foods in the morning. Unfortunately, these habits aren't always sustainable because food options are limited or costly. Luckily, we have this vanilla protein pancake recipe to nourish your body while tasting good!

If you're an athlete who follows a vegan diet, you know that it's that much harder to find a healthy and supportive breakfast. Luckily, our friend Loralynn Reddy is letting us share her super tasty vegan protein pancake recipe with you!

This recipe uses SunWarrior's classic vegan and gluten-free protein powder.

 

Protein Pancakes Recipe

Makes 8 protein pancakes

  • Prep time: 10 minutes
  • Cook time: 20 minutes
  • Total time: 30 minutes

What you'll need:

How to make protein pancakes:

  1. In a large bowl, sift together the flour, baking powder, sugar, and salt.
  2. In another bowl, mix the egg substitute, milk, and oil.
  3. Add the wet ingredients to the dry. Stir together and make sure not to overwork it.
  4. Let stand for 5 minutes to thicken. Add more milk if it gets too thick.
  5. While waiting, grease a frying pan or skillet. Preheat to 300F
  6. Scoop batter onto the pan. Cook until the top bubbles and the edges begin to brown, then flip. (Around 2 minutes)
  7. Cook the other side for around 1 minute.
  8. Repeat cooking steps for each vegan pancake.

You can add fresh or frozen fruit to the batter just before cooking if you would like. Serve them warm with some maple syrup, and enjoy!
